Thats correct.
The chips goes in standby when you open the jumper.
The chip opens the relay (the relay is there for security).
The mute function is a open contact. Close it and the relai wil close.
You can use the 15V to switch on a transistor whitch can switch off the mute.
Very simple circuit.

A 40 or 50k pot will do better.
The input impedance is to high with a 100k pot. This can generate noise.

Alu has a very hi resistance.
You can use metal or messing for this purpose.

you can olso just put a potentiometer in front of the amp.
A 50k wil do fine.
The input signal on the slider, one pin to the input of the amp, the other pint to ground.
